In ideal conditions, bread could last up to 10 days, depending on climate and humidity. Despite these benefits, calcium propionate cannot prevent mold entirely. It only slows down the process. Mold spores are present in the air, so hygiene during production, packaging, and storage is equally important. Proper equipment, clean environments, and trained staff are essential to maximize the effectiveness of preservatives.
